Two leaves, one counter. We roast coffee on Thursdays and whisk ceremonial matcha to order — and we refuse to be better at one than the other.
Ziarno — the bean
A 5 kg drum in the back room, one roast day a week, and nothing goes on bar before it has rested. Espresso is a single origin, changed monthly, never a blend.
Liść — the leaf
Ceremonial grade only, from a single cultivar and a single harvest. Whisked with a chasen at the counter, in front of you, because matcha goes bitter within the hour of milling being broken.
Three origins, rotated as they run out. Bags of 250 g to take home.
Roasted Thursday, rested until the following Thursday. We will not sell you a bag roasted yesterday — it needs the week to degas, and it tastes like it.
Last pour-over 30 minutes before close.
